Abstract:
(EN) Process of producing a grain product for human consumption which comprises subjecting parboiled grain to treatment with a measured quantity of a solution containing water and an enzyme or enzymes. The quantity of the solution is such that it is totally absorbed by the grain and subsequently removing the surface moisture from the grain. Preferably the parboiled grain is subject to compression while still hot by passing the grain between rollers prior to treatment with the enzyme containing solution. The invention also relates to an improved pasta product which resides in incorporating in the pasta or surface coating the pasta with the enzyme containing solution.
(FR) Procédé de production d'un produit céréalier destiné à la consommation humaine, comportant la soumission de la céréale échaudée à un traitement avec une quantité mesurée d'une solution contenant de l'eau et une ou plusieurs enzymes. La quantité de la solution est telle qu'elle est entièrement absorbée par la céréale; ultérieurement, on retire l'humidité superficielle de la céréale. La céréale échaudée est soumise de préférence à une compression pendant qu'elle est encore chaude en passant entre les cylindres avant le traitement avec la solution contenant les enzymes. La présente invention a également trait à un produit de pâte amélioré qui comporte l'incorporation de la solution contenant les enzymes dans la pâte ou la surface enduisant la pâte.
