Method and plant for the continuous fermentation of a fluid substrate with simultaneous separation of the metabolism products formed during fermentation, characterized according to the present invention in that the fermentation mixture is fed for fermentation purposes into a cycle, the surface of a membrane being also covered in the course of said cycle by a thin layer-like flow and the fermentation mixture supplied in the cycle being subjected to a pressure such that, during the covering of the membrane, the metabolism products thus formed are separated from the fermentation mixture simultaneously in the filtering path of the membrane, selectively and by fractions. In order to maintain a continuous operation, a substrate accumulation circuit (1, 10, 18, 21, 22) has been provided from which it is possible to continuously withdraw fresh substrate by passing it through a sterilization module (29) in order to introduce it into the fermentation mixture cycle (64, 65, 66). The metabolism products may be withdrawn continuously from the process.

Procédé et installation pour la fermentation continue d'un substrat fluide avec séparation simultanée des produits du métabolisme formés au cours de la fermentation, caractérisés conformément à la présente invention par le fait que le mélange de fermentation est amené à des fins de fermentation dans un cycle, la surface d'une membrane étant également recouverte au cours dudit cycle d'un écoulement en une couche mince et le mélange de fermentation amené dans le cycle subissant une pression telle que, pendant le recouvrement de la membrane, les produits du métabolisme formés sont séparés du mélange de fermentation simultanément sur le parcours de filtrage de la membrane de manière sélective et fractionnée. Pour conserver un fonctionnement continu, on a intercalé un circuit d'accumulation de substrat (1, 10, 18, 21, 22) duquel il est possible de retirer continuellement du substrat frais en le faisant passer par un module de stérilisation (29), afin de l'introduire dans le cycle de mélange de fermentation (64, 65, 66). Les produits du métabolisme peuvent être retirés continuellement du procédé.
