Abstract

A patty of food material (35) along with a method and apparatus for forming the patty. The food material (25) is forced through non vertical apertures (76) in a foraminous member (62) into a mold opening (32) in a mold plate (30) to form the patty. One or more agitators bars (90A) may be provided on the upstream side of the foraminous member to dislodge tissue fibers.

Pâté obtenu à partir d'une substance alimentaire (35) ainsi qu'un procédé et un dispositif permettant de produire ce pâté. La substance alimentaire (25) traverse de force des ouvertures non verticales (76) dans un organe perforé (62) et passe au travers de l'ouverture d'un moule (32) dans une plaque de moule (30) pour former le pâté. Une ou plusieurs barres agitatrices (90A) peuvent être disposées sur le côté en amont de l'organe perforé pour déloger les fibres de tissu.
