Abstract
(EN) The extractive materials are extracted in counter-current, from a finally pulverized substance in an extractive phase with extraction solutions having different concentrations in a flat filtering bed extractor (2). In an additional cold extraction phase, the solution with the highest concentration obtained in the main extraction phase is further concentrated by passing it on the ground extraction substance (21). The extraction residue obtained in the additional extraction phase is finally pulverized (7) in presence of a high concentration extraction solution obtained in the main extraction phase. The main extraction phase is followed by a final extraction phase wherein the counter-current extraction is continued, after a previous heating (16) or after a prolonged resting period, by means of relatively low concentration solutions. This extraction method is essentially used to obtain highly flavoured extracts from natural aromatic substances such as coffee, and the cold extraction phase allows to obtain an improvement of the yield while preserving the aroma to its highest level.
(FR) Les matières extractives sont extraites, à contre-courant, d'une substance finement pulvérisée dans une phase extractive avec des solutions d'extraction de concentrations différentes dans un extracteur à lit de filtrage plat (2). Dans une phase d'extraction froide supplémentaire, la solution la plus hautement concentrée obtenue dans la phase d'extraction principale est concentrée davantage en la faisant passer sur la substance d'extraction concassée (21). Le résidu d'extraction obtenu dans la phase d'extraction supplémentaire est finement pulvérisé (7) en présence d'une solution d'extraction à haute concentration obtenue dans la phase d'extraction principale. La phase d'extraction principale est suivie d'une phase d'extraction finale, dans laquelle l'extraction à contre-courant se poursuit, après un réchauffement préalable (16) ou après un repos prolongé, au moyen de solutions à concentration relativement basse. Ce procédé d'extraction est utilisé principalement pour l'obtention d'extraits très aromatisés à partir de substances aromatiques naturelles telles que le café, et la phase d'extraction froide permet d'obtenir une augmentation du rendement en préservant l'arôme au plus haut degré.
