According to the method for extracting substances, particularly from aroma rich materials, a plurality of amounts of removal solvents of different concentrations are mixed successively step by step, at each cycle, with the very finely ground extraction substance, which is renewed after each cycle. The method starts with the solvent having the highest concentration (I) and ends with the solvent having the lowest concentration (XIII). After the formation of each mixture (2), a solvent enriched with extracts is again (3) separated from the mixture, the solvent having the highest concentration (0) being discharged and replaced by fresh solvent, and the other separated solvents are stored for the following cycle. With each cycle, the extraction substance is mixed(5, 6) at least once and intensively with an amount of solvent, said mixture being obtained in an intensive agitator or in a ball-mill, thereby increasing the yield. The temperature of the method corresponds to room temperature and the device for implementing such method comprises an extractor having a flat filter bed (2) wherein there is provided a device for cleaning the filtering material (3). The cleaning device comprises, below the filtering material, a rotary nozzle wherefrom a high pressure purifying product is ejected and traverses the filtering material from bottom to top. By cleaning the filtering material, an increase in the separation rate in the extractor is obtained.
