(EN)Process for the preparation of active dried microorganism mass and in particular active dried baker"s yeast, comprising a disintegration of a compressed mass of microorganisms into particles and drying these particles in a fluidized bed drying equipment without previously dried air up to a dry matter content of from 75 to 90%, whereafter the particles of the microorganism mass are additionally treated in a vacuum drum, at a temperature of from 25 to 45 C and a pressure of from 1-10 mm Hg (133-1330 Pa), until the particles have reached a final dry matter content of from 90-98%. Preferably yeast particles are initially dried in a fluidized bed dryer using air of an initial temperature of from 90-130 C and having a space velocity in the bed of 0.8-2.0 m/s, while the particles are kept on a wet-bulb temperature of at most 45 C, and whereby the load of the fluidized bed dryer is 100-1000 kg/m2 floor area. More preferably a surface active agent is added to the microorganism mass before drying.
(FR)Procede de preparation d"une masse de micro-organismes actifs seches et en particulier de levure de boulangerie active sechee, consistant a desintegrer une masse comprimee de micro-organismes en particules et a secher ces particules dans une installation de sechage a lit fluidise sans faire secher au prealable, jusqu"a obtenir une concentration de matiere seche de 75 a 90%, apres quoi les particules de la masse de micro-organismes sont traitees dans un tambour a vide, a un temperature de 25 a 45 C et a une pression de 1 a 10 mm Hg (133-1330 Pa), jusqu"a ce que les particules aient atteint une teneur finale en materiau sec de 90 a 98%. De preference, les particules de levure sont d"abord sechees dans une secheuse a lit fluidise en utilisant de l"air a une temperature initiale de 90 a 130 C et ayant une vitesse dans le lit de 0,8 a 2,0 m/s, tandis que les particules sont maintenues a une temperature d"un thermometre a boule mouillee d"au moins 45 C, la charge de la secheuse a lit fluidise etant de 100 a 1000 kg/m2 de la surface du plancher. De preference, on ajoute un agent tensio-actif a la masse de micro-organismes avant le sechage.
