Abstract:
(EN) Production of food proteins of vegetable origin and detoxification of the toxic and non proteinaceous substances associated. The vegetable material is first treated at alkaline pH with hydrogen peroxide to prepare a solution of proteins, which is then acidified up to a pH ranging from 6 to 8.5. A clear solution of proteins is obtained to which catalase and then an anti-oxydant are added. The proteins are collected in the usual way. Extraction of proteinaceous fractions suitable for animal and human food.
(FR) Obtention de proteines alimentaires d"origine vegetale et detoxification des substances toxiques et non proteiques associees. On traite d"abord la matiere vegetale a pH alcalin par l"eau oxygenee pour preparer une solution de proteines, qui est ensuite acidifiee jusqu"a un pH de 6 a 8,5. On obtient une solution clarifiee de proteines a laquelle on ajoute de la catalase puis un anti-oxydant. On recupere enfin les proteines de la maniere usuelle. Extraction de fractions proteiques convenant a l"alimentation animale et humaine.
