Abstract
(KO) 본 발명의 과제는 감미 및/또는 염미의 증강제 및 감미 및/또는 염미를 증강시키는 방법을 제공하는 것에 있다. 상기 과제를 해결하기 위해, 본 발명의 감미 및/또는 염미의 증강제는 과산화물가가 15~180이고, 10 질량% 이상 100 질량% 이하의 유지방을 포함하는 산화 유지를 유효 성분으로 하며, 또한 본 발명의 식품의 감미 및/또는 염미를 증강시키는 방법은 과산화물가가 15~180이고, 10 질량% 이상 100 질량% 이하의 유지방을 포함하는 산화 유지를 식품에 첨가하는 것을 특징으로 한다.
