The present invention relates to a device (1) and method for manufacturing a food roll, such as a sushi roll. The device comprises a substantially rectangular mat (21) for the purpose of rolling up a quantity of rice, optionally with ingredients placed therein, in a roll-up direction. Further present is a lifting member (10) for lifting a part of the mat locally over the width of the mat. Two guide members which can be arranged on either side of the mat guide the lifting member during the forward movement, wherein the two guide members (2, 3) are adapted to guide the lifting member via a determined path (4, 5). The path comprises an enclosing section running from a starting point to a lower-lying end point so that, as the lifting member moves through the enclosing section, the filling material is enclosed by the mat. From the end point of the enclosing section a rolling section runs to an end point lying further away relative to the main end of the mat so that, as the lifting member moves through the rolling section, the filling material and the optionally present casing material are rolled up by the mat, so creating the food roll.

La présente invention concerne un dispositif (1) et un procédé de fabrication d'un produit alimentaire en forme de rouleau, tel qu'un sushi. Ledit dispositif comprend une natte essentiellement rectangulaire (21), permettant de former un rouleau constitué d'une certaine quantité de riz, et contenant éventuellement d'autres ingrédients, dans une direction d'enroulement ascendante. Ledit dispositif comprend, en outre, un élément qui va soulever la natte (10), permettant, donc, de soulever une partie de la natte localement et sur toute sa largeur. Deux éléments guides, pouvant être disposés de part et d'autre de la natte, guident l'élément qui va soulever la natte pendant le mouvement d'avancement, les deux éléments guides (2, 3) étant conçus pour guider l'élément qui va soulever la natte le long d'un trajet déterminé (4, 5). Ledit trajet comprend une section de garniture allant d'un point de départ jusqu'à un point terminal situé plus bas, si bien que lorsque l'élément qui va soulever la natte se déplace à travers la section de garniture, la garniture est enfermée dans la natte. A partir du point terminal de la section de garniture, une section d'enroulement va jusqu'à un point terminal situé plus loin par rapport à la principale extrémité de la natte, si bien que lorsque l'élément qui va soulever la natte se déplace le long de la section d'enroulement, la garniture et le matériau de revêtement éventuellement présent sont enroulés par la natte, donnant ainsi le produit alimentaire en forme de rouleau.
