Abstract
(EN) The invention pertains to a whipping agent for use in the preparation of edible toppings comprising on a dry weight basis: - 25 to 75% by weight of a non-palm based edible oil or fat; - 5 to 30 % by weight of a non-palm based alpha tending emulsifier; - 1 to 15% by weight of a proteinaceous emulsifier; and - 25 to 60% by weight carbohydrates. The invention further pertains to an instant edible powder composition comprising the whipping agent and to edible toppings prepared from the whipping agent or the instant edible powder composition. The invention further pertains to a method of preparing the whipping agent and to a method of preparing a whipped topping.
(FR) L'invention se rapporte à un agent moussant destiné à être utilisé dans la préparation de garniture comestible comprenant sur une base de poids sec : de 25 à 75 % en poids d'un non-huile ou graisse comestible à base de palme; -5 à 30 % en poids d'un non-émulsifiant à tendance alpha à base de palme;-1 à 15 % en poids d'un émulsifiant protéique; et de 25 à 60 % en poids d'hydrates de carbone. En outre, l'invention se rapporte à une composition de poudre comestible instantanée comprenant l'agent moussant et à garniture comestible préparé à partir de l'agent moussant ou la composition de poudre comestible instantanée. En outre, l'invention se rapporte à un procédé de préparation de l'agent moussant et à un procédé de préparation d'une garniture de crème fouettée.
