(DE) Die vorliegende Erfindung betrifft ein Emulgatorsystem, enthaltend a) ein Molkeprotein und/oder ein Molkeprotein Hydrolysat und b) einen Saccharose-Fettsäureester mit einem HLB-Wert im Bereich von 10 bis 18 und damit hergestellte Emulsionen.
(EN) The invention relates to an emulsifier system containing a) a milk serum protein and/or a milk serum protein hydrolysate, and b) a saccharose fatty acid ester having an HLB value of between 10 and 18. The invention also relates to emulsions produced therewith.
(FR) La présente invention concerne un système émulsifiant contenant : a) une protéine de lactosérum et/ou un hydrolysat de protéine de lactosérum ; et b) un ester d'acide gras de saccharose ayant une valeur HLB de 10 à 18, ainsi que des émulsions préparées à partir de ce système émulsifiant.
