The invention discloses a nutritional tomato seed oil and a production process thereof. The process flow is simple, the loss of nutrients is avoided, and the prepared tomato seed oil is clear and transparent, safe for consumption, high in oxidation stability, and rich in nutrition. By optimizing the process, the content of lycopene in the tomato seed oil is increased, and the nutritional effect of the tomato seed oil is enhanced. The production process of the nutritional tomato seed oil comprises the following steps: (1) drying and smashing of tomato seeds; (2) physical squeezing of the tomato seeds; (3) degumming; (4) deacidification; (5) decolorization; and (6) deodorization.

本发明公开了一种营养番茄籽油及其生产工艺,工艺流程简单,避免了营养物质的损失,制备得到的番茄籽油澄清透明,食用安全,氧化稳定性高,营养丰富,通过对工艺的优化,提高了番茄籽油中具有番茄红素的含量,增强了番茄籽油的营养功效。其生产工艺包括以下步骤:(1)将番茄籽干燥、粉碎;(2)物理压榨;(3)脱胶;(4)脱酸;(5)脱色;(6)脱臭。
