uma composição nutricional colherável esterilizada por calor que compreende: fonte de proteína em uma quantidade de 12 a 20% em peso da composição, fonte de proteína que consiste em proteína do soro do leite que contém micelas de proteína do soro do leite e fonte de caseína. um processo de preparo de uma composição nutricional colherável esterilizada por calor que compreende proteína em uma quantidade de 12 a 20% em peso, com base no peso da composição, dita proteína consiste em proteína do soro do leite que contém micelas de proteína do soro do leite e caseína, que compreende as etapas de: (i) fornecer uma solução aquosa de uma fonte de proteína que consiste em proteína de soro de leite que contém micelas de proteína de soro de leite e (ii) adicionar uma fonte de proteína que contém caseína; (iii) executar uma etapa de tratamento de homogeneização; (iv) executar uma etapa de tratamento térmico por uht (ultra-alta temperatura) indireto; (v) executar uma etapa de tratamento de homogeneização, após as etapas de (i) a (v), uma composição nutricional colherável esterilizada por calor é obtida com uma viscosidade entre 400 e 4.000 mpa.s a 20°c, medida a uma taxa de cisalhamento de 100 s-1.
