processo de controle de uma panela para preparo de arroz sob pressão e panela panela para preparo de arroz sob pressão utilizando referido processo. a presente invenção se refere a um processo de controle de uma panela para preparo de arroz sob pressão compreendendo um compartimento (10) fechado por uma tampa, o compartimento (10) sendo equipado com um elemento aquecedor (17) principal de uma cuba (11) colocada dentro do compartimento (10), um elemento (18), que aquece a borda superior da cuba (11), um elemento (19), que aquece a tampa (12), uma válvula (20) de despressurização sincronizada, um primeiro sensor (15) de temperatura situado na proximidade do fundo da cuba (11) e um segundo sensor (16) de temperatura colocado na tampa (12), o processo sendo caracterizado por compreender:-uma etapa de imersão durante a qual os elementos aquecedores (17,18,19)são controlados para atingir uma mtemperatura estabelecida compreendida entre 100 e 120ºc no interior da cuba (11); - uma etapa de cozimento, iniciada quando a temperatura estabelecida é alcançada, durante a qual os elementos aquecedores (17, 18, 19) são controlados para manter a temperatura constante no interior da cuba (11) durante um período determinado compreendido entre 15 e 20 min.
