Abstract
(ES)
Concentrado salado que contiene: a) desde 22 hasta 85% en peso de sal inorgánica; b) desde 2 hasta 60% en peso de grasa, c) desde 0,2 hasta 4,8 % en peso de goma de xantana; d) desde 0,2 hasta 4,8% en peso de goma polisacárido, seleccionada entre goma garrofín, goma guar, goma konjac y sus combinaciones; e) desde 0 hasta 25% en peso de componente de glutamato; f) desde 0 hasta 25% en peso de almidón; g) desde 0 hasta 20% en peso de azúcar; y h) desde 0 hasta 45% en peso de materia vegetal; en donde los componentes a) a f) constituyen, en forma conjunta, al menos 55% en peso del concentrado salado; y en donde la combinación de goma xantana y goma polisacáridos está presente en el concentrado salado en una concentración que oscila entre 0.6 y 5% en peso. Este concentrado salado se puede usar de manera adecuada, en la preparación de caldos, fondos, sopas, salsas, o jugos de carne, y no solamente imparte sabor y refuerzo del sabor, sino que además mejora la textura del producto final.
