a invenção se refere a um concentrado de sabor contendo: a) 22-85% em peso de sal inorgânico; b) 2-60% em peso de gordura; c) 0,2-4,8% em peso de goma xantana; d) 0,2-4,8% em peso de goma de polissacarídeo selecionada dentre goma alfarroba, goma guar, goma de konjac e suas combinações; e) 0-25% em peso de componente de glutamato; f) 0-25% em peso de componente de amido; g) 0-20% em peso de açúcar; h) 0-45% em peso de matéria vegetal; em que os componentes a) a f), juntos, constituem pelo menos 55% em peso do concentrado de sabor; e em que a combinação de goma xantana e da goma de polissacarídeo está presente no concentrado de sabor em uma concentração de 0,6-5% em peso. este concentrado de sabor pode ser utilizado adequadamente na preparação de caldo de carne, caldo, sopa, tempero ou molho, e não concede somente sabor e realce de sabor, mas, adicionalmente, melhora a textura do produto final.
