C LAIM S:

1. An oyster openi ng apparatus compri si ng:

a support channel;

a stanchion connected to the support channel to form a base of the oyster opening apparatus, wherein an open slot is formed at a top end of the stanchion on a face that is contiguous with the support channel;

a hinge rod disposed transversely to the open slot on the stanchion;

a connecting rod disposed to engage loosely with the hinge rod, so that the connecting rod is pivotable about the stanchion in a rocking manner, with a longitudinal axi s of the connecti ng rod substanti al ly al ong a I ength of the support channel ; and

a lever having an upper lobe and a lower lobe at a proximal end, and a handle at a distal end, with the upper lobe being pivoted to the connecting rod and a shucking member being connected at the lower lobe;

wherein, when an oyster is placed on the support channel and in contact with the stanchion, the shucking member is operable to contact an indentation near the hinge of the oyster and when a force is applied onto the handle, the shucking member progresses to di rect an obi i que and upward force to pry open the oyster.

2. The apparatus according to claim 1, wherein the connecting rod has a lower edge and a series of notches on the lower edges allow the connecting rod to adjustably engage the hi nge rod accordi ng to a size of the oyster.

3. The apparatus according to claim 2, further comprising a link bar disposed to pivotly connect the connecting rod to the upper lobe on the lever, to provide additional degrees of freedom of moti on at the shucki ng member.

4. T he apparatus accordi ng to any one of the precedi ng cl ai ms, wherei n a thi ckness of the connecting rod is loosely engaged i n the open slot on the stanchion to provide a li mited lateral degree of play for the shucki ng member.

5. The apparatus according to any one of the clai ms, wherein the support channel comprises a V- or U-shaped depression formed along a length dimension of the support channel.

6. The apparatus according to claim 5, further comprising a slot formed at an end of the V- or U-shaped depression that is contiguous with the stanchion.

7. The apparatus according to claim 5, wherein the contiguous face of the stanchion comprises an aperture, with the aperture being formed above the V - or U-shaped depression, so that an oyster is stably supported at two contact points on the V - or U-shaped depressi on and at a thi rd contact poi nt at the aperture.

8. The apparatus according to claim 7, wherein the aperture is a slot with a width of the si ot near the centre taperi ng to each of two ends.

9. The apparatus according to claim 7, further comprising a stopper plate disposed above the aperture, wherein the stopper plate provides another third contact point for I ocati ng the oyster on the apparatus.

10. The apparatus according to any one of the preceding claims, wherein the shucking member comprises a pointed end.

11. The apparatus accordi ng to clai m 10, wherein the pointed end is formed by chisel-shaped edges, with the chisel -shaped edges facing upward.

13. A method of shucki ng a I ive oyster, the method compri si ng:

supporting the oyster stably on a support channel and in contact with a stanchion; applying a force on a lever and transmitting the force to an indentation near the hi nge of the oyster via a shucki ng member;

connecting the lever to the stanchion in an articulate manner through a connecting rod; and

allowing the shucking member to slide on a lower half-shell of the oyster and di recti ng the force at an obi i que and upward manner i n order to pry open the oyster.

14. The method according to claim 13, wherein the connection between the lever and the stanchion is loose, so as to accommodate to different sizes of oysters and to provide a limited lateral degree of motion of the shucking member to accommodate to different shapes of oysters.

15. The method according to claim 13, further comprises removing the oyster from the support channel, and cutting the adductor muscle at least at the lower half-shell to free the f I esh of the oyster or I ooseni ng the f I esh of the oyster from the adductor muscl e.
