Abstract
(EN) The present invention relates to a continuous enzymatic process for obtaining virgin oil and a solid by-product rich in proteins, fibres and hydrolysed carbohydrates from coconut pulp, which comprises the steps: dry grinding of the coconut pulp; formation of an aqueous emulsion by mixing the ground pulp with water; wet grinding of the aqueous emulsion; continuous enzymatic hydrolysis in a jacketed, multi-stage continuously stirred tank reactor; centrifugation of the product obtained in the previous step; separation of the mass obtained in the previous step into three fractions: a fraction (1) comprising the supernatant oil, a fraction (2) comprising the aqueous fraction and a fraction (3) comprising the insoluble part; removal of moisture from fraction (1) to a water value of less than 0.1%, obtaining virgin oil; removal of moisture from fraction (3) to a water value of less than 0.1%, obtaining the solid by-product rich in proteins, fibres and hydrolysed carbohydrates; and recovery of the enzyme from fraction (2).
(FR) La présente invention concerne un procédé enzymatique continu permettant d'obtenir de l'huile vierge et un sous-produit solide riche en protéines, en fibres et en glucides hydrolysés à partir de pulpe de noix de coco, qui comprend les étapes suivantes : le broyage à sec de la pulpe de noix de coco ; la formation d'une émulsion aqueuse par mélange de la pulpe broyée avec de l'eau ; le broyage humide de l'émulsion aqueuse ; l'hydrolyse enzymatique continue dans un réacteur agité continu multi-étagé à double enveloppe ; la centrifugation du produit obtenu à l'étape précédente ; la séparation de la masse obtenue à l'étape précédente en trois fractions : une fraction (1) contenant le surnageant huileux, une fraction (2) contenant la fraction aqueuse et une fraction (3) contenant la partie insoluble ; la déshydratation de la fraction (1) jusqu’à une teneur en eau inférieure à 0,1 %, pour obtenir l’huile vierge ; la déshydratation de la fraction (3) jusqu’à une teneur en eau inférieure à 0,1 %, pour obtenir le sous-produit solide riche en protéines, en fibres et en glucides hydrolysés ; et la récupération de l’enzyme à partir de la fraction (2).
