The invention relates to a continuous vacuum deep-fat frier in the form of a duct, characterised in that said duct extends horizontally along a path above the inlet and outlet points, such that the pressure in the higher part of the duct is below the atmospheric pressure as a result of difference in oil level. In order to prevent the oil from overflowing, both ends of the duct are in the form of an inverted siphon and the upper part of the duct comprises a vacuum pump for extracting the vapours produced during the frying. An auxiliary line connects the inlet and outlet siphons by means of the lower part thereof in order to maintain the level of the oil. The oil heats up by means of heat sources through the walls of the duct. In order to protect the product to be fried, the product can be optionally placed inside closed baskets. The invention relates to the field of biotechnology and to processes that employ membrane technologies. In particular, the invention relates to a method for obtaining an extract rich in tannins of ellagic acid from blackberries (Rubus spp.) and from other fruits that contain these compounds, as well as to the extract obtained using said method. The method is essentially based on baromembrane technologies that allow mechanical separation and effective fractionation between the polyphenol compounds, by means of interactions between the physico-chemical properties thereof, the material of the membrane and the molar mass of same, thereby allowing enrichment of a fraction of the natural extract with ellagic acid tannins and modification of the content thereof in terms of anthocyanins and other compounds such as sugars and acids.
